How To Plan an Astrology Themed Event for Your Open House Part 2

From the first posting in this series, How To Plan an Astrology Themed Event for Your Open House Part 1, I talked about the process I used to decide the theme of the event that I had for my latest Open House.

In this post, I will be giving the Recipes for a couple of the items that I made for this event.

Aquarius Avocado Cranberry Chutney

I found this recipe by searching Cinco de Mayo recipes.  The website is Avocados from Mexico.  I did make a few modifications to this recipe.  Raw onions disagree with my digestion, so I did not add any onions in my version. I discovered that the Avocados had turned slightly black and were too soft, so I only used one Avocado, and a whole lot more dried cranberries.  I also did not use the orange juice, but the juice from one lemon.

Ingredients

  • 2 large onions, peeled and sectioned
  • 1 large finely diced peeled, seeded cucumber
  • 1 1/2 cup dried Cranberries
  • Juice from 1 lemon
  • Celtic Sea Salt
  • a couple of pinches of crushed red pepper
  • 1 avocado, halved, pitted, peeled and diced
  • 1 cup finely chopped cilantro
  • 1/4 cup red wine vinegar

Preparation

With a sharp knife, cut peel and all white pith from the oranges.  Cut each segment into 3 or 4 pieces. Add the cucumber, dried cranberries, lemon juice, vinegar, salt, red pepper, cilantro and avocado.  Cover and refrigerate overnight.

Leo Lemon Bars

I found this recipe from the Allrecipes Website.  It was quick and easy to do, and I received a lot of positive feedback from people.  In fact, I packed a couple of to-go plates for people when it was time for them to leave.

 

 

Ingredients

  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 2 cups all-purpose flour
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup all-purpose flour
  • 2 lemons, juiced

Directions:

  1. Preheat oven to 350 degrees F
  2. In a medium bowl, blend together softened butter, cups flour and 1/2 cup sugar.  Press into the bottom of an ungreased 9×13 inch pan.
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.  In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour.  Whisk in the eggs and lemon juice.  Pour over the baked crust.
  4. Bake for an additional 20 minutes in the preheated oven.  The bars will firm up as they cool.
